  1. Sauté garlic and onions in hot olive oil until onions are transparent
  2. Add rest of vegetables, tomatoes last
  3. Season and add flour, mix well
  4. Cover and simmer 1 hour
  5. Uncover, raise heat and cook 15 minutes more to thicken
