Ingredients
- 1 1/2 lb large tail-on shrimp (cooked)
- 8 tablespoons olive oil
- 3 tablespoons fresh lemon juice
- 2 tablespoons dijon mustard
- 2 tablespoons fresh dill, chopped
- 2 cloves garlic, minced
- 1 tablespoon grated lemon peel
- 1/4 cup drained capers
- 2 green onions, sliced thin
Preparation
- Whisk together the shrimp, olive oil, lemon juice, mustard, dill, garlic, and lemon peel.
- Add the capers and green onions.
- Marinate for 3 hours to 1 day.
- Serve over butter lettuce leaves.
