Chicken Casserole (Lunds) Ingredients
- 3 lb. chicken
- 3/4 cup brown and wild rice, mixed
- Slivered almonds
- 1 cup canned mushrooms, drained
- Reserved liquid from canned mushrooms
- 6 oz. evaporated milk
- 1 can cream of chicken soup
- 1/4 cup sherry
- 1 package dry onion soup
Preparation
- Line bottom of roaster with foil
- Cover with the rice and top with slivered almonds
- Add the drained mushrooms
- Place cut up chicken on top
- Combine reserved liquid from mushrooms, evaporated milk, cream of chicken soup and sherry
- Pour over chicken
- Sprinkle dry onion soup on top
- Cover and bake for 2 hours at 350°
- Uncover and bake 1/2 hour longer
