Ingredients
- 2 tablespoons vegatable oil
- 1 medium onion, chipped
- 2 tomatoes, peeled, seeded, and chopped
- 2 tablespoons canned chopped jalapenos
- 1 10oz package of frozen spinach, thawed and drained
- 2 cups grated monterey jack cheese
- 8oz creem cheese, cut up, room temp
- 1 cup half and half
- 2 2.2oz cans sliced black olives, drained
- 1 tablespoon red wine vinegar
Preparation
- Heat oil in a heavy skillet over medium heat.
- Add onion and saute until soft, stirring occasionally
- Add tomatoes and chilis, cool 2 minutes
- Transfer mixture to large bowl and stir in spinach, cheeses, half and half, olives and vinegar
- Season with salt and pepper
- Spoon into a shallow ovenproof dish and bake at 400 degrees until bubbly, around 35 minutes
- Serve with tortilla chips
