Hot Mexican Spinach Dip

Ingredients

Preparation

  1. Heat oil in a heavy skillet over medium heat.
  2. Add onion and saute until soft, stirring occasionally
  3. Add tomatoes and chilis, cool 2 minutes
  4. Transfer mixture to large bowl and stir in spinach, cheeses, half and half, olives and vinegar
  5. Season with salt and pepper
  6. Spoon into a shallow ovenproof dish and bake at 400 degrees until bubbly, around 35 minutes
  7. Serve with tortilla chips
