Ingredients
- 2 avocados, cubed
- 2 large tomatoes, seeded and cubed
- 1 can white corn
- 1 can black-eyed pease; rinse and drain
- 2/3 cup cilantro; chopped
Dressing
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 garlic clove, minced
- 1 teaspoon cumin
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
